Growing up in a barrel takes years.
Our barrel aged Balsamic Vinegar begins its journey in Italy, where it is aged to the traditional Italian standard. Our supplier began in 1889, working with centuries old recipes, and continues into their 3rd generation.
Our balsamic vinegar is perfectly balanced by Mother Nature, who produces an exceedingly rich, sweet and complex vinegar. It all begins with the Trebbiano grapes in Modena Italy. Just like it was made centuries ago, the Trebbiano grapes are pressed, cooked, and then the “must” is decanted into wooden barrels and allowed to age.
During this evaporation/aging period, the sugars condense, making the balsamic exceedingly thick, dark and sweet, much like allowing a grape to turn into a raisin. The sweetness of our balsamic flavors comes strictly from the grapes and the process of barrel-aging.
Our Extra Virgin Olive Oils come to us from suppliers who have been working with Olive Oils for hundreds of years, and provide us with the highest quality available. We source our Oil according to what is freshest at the time of order. Because we hand bottle in our Bend kitchen, you can be assured we do not hold product for more than a few weeks at a time. You are assured every bottle comes to you fresh and at its best, every time!
When we receive our Balsamic Vinegar and Extra Virgin Olive Oil at our kitchen in Bend Oregon, we add only high quality natural ingredients to produce the gourmet flavors so many of our customers use daily in their kitchens.
